Ingredients
  

For the filling
  • 4 large large eggs, lightly beaten
  • 1 cup bell peppers, diced Mix colors for a vibrant touch
  • 1/4 cup green onions, chopped Extra burst of flavor
  • 1 cup shredded cheese Cheddar or your favorite type
  • salt & pepper, to taste
For assembling
  • 10 egg roll wrappers Ensure they are fresh
  • oil spray For a crispy finish

Method
 

Preparation
  1. In a large skillet over medium heat, scramble the eggs until just set. Season with salt and pepper. Add in the diced bell peppers and chopped green onions, cooking for an additional 2-3 minutes. Remove from heat and stir in the shredded cheese.
  2. Lay an egg roll wrapper on a clean surface, with a corner pointing towards you. Place 2-3 tablespoons of the egg mixture in the center. Fold up the bottom corner over the filling, then fold in the sides tightly. Roll it up, sealing the top corner with a dab of water.
Cooking
  1. Preheat the Air Fryer to 380°F (193°C) for about 5 minutes.
  2. Lightly spray the egg rolls with oil and place them in the air fryer basket in a single layer. Cook for 8-10 minutes or until golden brown and crispy, flipping halfway through.
Serving
  1. Let them cool slightly before serving. Enjoy with your favorite dipping sauce or just on their own!

Notes

Feel free to mix and match the fillings! Cooked sausage, spinach, or mushrooms are great additions. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
