Ingredients

Main Ingredients
  • 1 pound baby potatoes (halved) Use uniform-sized baby potatoes for even cooking.
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • to taste Salt and pepper
For Garnishing
  • to taste Fresh parsley (chopped) For garnishing before serving.

Method

Preparation
  1. Preheat your air fryer to 400°F (200°C).
  2. In a large bowl, combine the halved baby potatoes with olive oil, minced garlic, dried Italian herbs, salt, and pepper. Toss until the potatoes are evenly coated.
Cooking
  1. Place the seasoned potato halves in the air fryer basket in a single layer (you may need to do this in batches). Cook for 12-15 minutes, shaking the basket halfway through to ensure even cooking.
  2. Check for doneness. The potatoes should be golden brown and crispy. If they need more time, continue air frying in 1-2 minute increments until they reach the desired crunch level.
Serving
  1. Once cooked, remove the potatoes from the air fryer and sprinkle them with fresh parsley. Serve immediately for the best texture and flavor!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, air fry at 350°F (175°C) for about 5 minutes. They can also be frozen for up to two months after cooling completely.
