  • 2 tablespoons olive oil
  • 1 lemon Juice of 1 lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 1 cup breadcrumbs (panko works great for extra crunch)

Method

Preparation
  1. Start by cutting the chicken breasts into bite-sized pieces.
  2. In a bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Add the chicken pieces and toss until well coated. Let them marinate for at least 15-20 minutes.
  3. After marinating, take the chicken bites out and coat them in breadcrumbs, pressing gently for an even layer.
  4. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Cooking
  1. Place the breaded chicken bites in the air fryer basket in a single layer.
  2. Cook for 10-12 minutes, shaking the basket halfway through to ensure even cooking.
  3. Once cooked through and golden brown, let them rest for a few minutes before serving.
Serving
  1. Serve the Air Fryer Lemon Chicken Bites warm, drizzled with a little more fresh lemon juice if desired.

Notes

For deeper flavor, marinate your chicken for up to an hour. Use panko breadcrumbs for extra crispiness. Don’t overcrowd the air fryer for even cooking. Ensure chicken reaches an internal temperature of 165°F (75°C).
