Ingredients
  

Dry Ingredients
  • 1 cup Whole wheat flour Can substitute with almond flour for gluten-free option.
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 1/4 cup Sugar substitute (like stevia or a low-calorie sweetener) Adjust sweetness to your preference.
Wet Ingredients
  • 1/2 cup Non-fat Greek yogurt
  • 1/4 cup Almond milk (or any non-dairy milk)
  • 1 teaspoon Vanilla extract
Coating
  • 1/4 cup Sugar For the cinnamon-sugar mixture.
  • 1 tablespoon Cinnamon

Method
 

Preparation
  1. In a large bowl, whisk together the whole wheat flour, baking powder, cinnamon, and sugar substitute until well combined.
  2. In another bowl, mix the Greek yogurt, almond milk, and vanilla extract until you achieve a smooth mixture.
  3. Add the wet ingredients to the dry ingredients and stir until a dough forms. It should be slightly sticky but manageable. If it's too wet, add a little more flour.
Cooking
  1. Preheat your air fryer to 350°F (175°C).
  2. Scoop small portions of dough and shape them into bite-sized pieces.
  3. Place the bites in the air fryer basket in a single layer and air fry for about 8–10 minutes or until golden brown and cooked through.
  4. Once done, immediately roll the warm churro bites in the cinnamon-sugar mixture.
Serving
  1. Enjoy your churro bites warm with a variety of dips.

Notes

These churro bites can also be paired with chocolate sauce or a creamy vanilla yogurt dip. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month. Reheat in the air fryer to restore crunchiness.
