  • ¼ cup soy sauce or a gluten-free alternative
  • 2 tablespoons honey Add more for sweetness if desired
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
For the chicken
  • 1 lb boneless, skinless chicken thighs
For thickening
  • 1 tablespoon cornstarch for thickening the sauce
For garnish
  • Sesame seeds to sprinkle on top
  • Chopped green onions to sprinkle on top

Preparation
  1. In a mixing bowl, combine soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Stir well until everything is nicely blended.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Let it marinate for at least 15 minutes to absorb all that delicious flavor. You can also marinate it in the fridge for up to 2 hours for an even richer taste.
Cooking
  1. Preheat your air fryer to 380°F (190°C) for about 5 minutes.
  2. Place the marinated chicken thighs in the air fryer basket in a single layer. Cook for about 15-20 minutes, turning halfway through. The internal temperature should reach 165°F (75°C).
Sauce Preparation
  1. While the chicken is cooking, pour the leftover marinade into a small saucepan. Mix with cornstarch over medium heat, stirring until thickened.
Serving
  1. Once the chicken is done, drizzle the thickened sauce over the pieces and garnish with sesame seeds and chopped green onions.

Notes

Marinate chicken longer for enhanced flavor. Adjust the sauce for sweetness or add heat with chili flakes. Ensure chicken reaches 165°F for juicy perfection. Store leftover chicken in the fridge for up to 4 days.
